Chopped celery ¼ cup
Carrots ½ cup,
Mushrooms: ½ cup
Potatoes 1 cup
Broccoli 1 cup
Vegetable stock 4 cups
Chopped Garlic 1 large clove
Chopped onion ¼ cup
Salt to taste
Black pepper powder
Heat some oil in a pan. Now add chopped garlic and onions and fry it on medium heat for a few seconds. Then add the chopped celery and carrots and saute it for a couple of minutes.
Add the broccoli in the pan with the other ingredients and cook it for a minute. Add in the chopped mushrooms. Once everything is mixed properly, add the vegetable stock. You can also use chicken stock if you want to. Let everything cook properly for several minutes.
You can also add other vegetables like potatoes, cabbage, and cauliflower.
Add salt, black pepper and let the soup boil for a couple of more minutes. If you like spicy, you can toss in a few green chillies in the soup before turning off the heat.
The hot and healthy soup is now ready to be served.
